The goodbye post
Dear Miss Julia,
You are a great teacher despite our differences. Despite all, I think you are a quality teacher, a teacher that really loves her job, a teacher that enjoys sharing experiences of life. I understand that sometimes you get upset with us because we arrive late to class or we talk to much or we complain about our absenses (me) haha, I overthink alot that's why my attitude sometimes is not the greatest one. Anyways I have learned that people are not perfect and puntuality is a great factor in our lives. Thank you for sharing your experiences. Thank you for those daily quotes and advices you gave us. I learned things in your class? Of course I did! I'm going to miss learing english this way. But I WILL continue to study the language. Hope your next students aren't as cool as we are, haha! Just kidding.

MY FAVORITE RECIPES
CHIPOTLE PASTA
Ingredients
1 ounce olive oil
1 hot link, cut in 6 bias slices
5 (21/25 shrimp), deveined, shelled and butterflied
4 ounces heavy cream
3 ounces Chipotle Sauce, recipe follows
1/2 teaspoon sea salt
1/2 teaspoon ground black pepper
9 ounces cooked penne pasta
2 ounces Parmesan, grated
1 tablespoon diced tomato
1 tablespoon diced scallion
Directions
In saute pan over high heat, add olive oil and hot links. Sear links until browned. Add the shrimp and cook until pink. Lower heat to medium. Then add cream, chipotle sauce, salt and pepper. Add cooked pasta and the cheese. Toss to combine.
Serve in pasta bowl and garnish with diced tomato, scallions, and more grated Parmesan.
Chipotle Sauce:
1 cup BBQ sauce
1/2 cup canola oil
1/4 cup lemon juice
1/2 ounce Dijon mustard
2 ounces chipotle paste
1/2-ounce red chili flakes
1/4 teaspoon cayenne pepper
1/4 teaspoon ground black pepper
Combine all ingredients in blender, puree, cover and refrigerate.

2 jalapenos, seeded and finely diced
4 tablespoons canola oil
1/2 dry thin rice noodles, lightly broken up
Directions
Thinly slice the tuna steak (sashimi-style). Place the thin layers of tuna on a plate. Remove the rind and pith of 1/2 an orange, then slice and quarter. Remove the rind and pith of 1/2 a grapefruit, then slice and quarter. Lay the orange and grapefruit quarters on top of the tuna.
Juice the remaining orange half into a small bowl and whisk in the soy sauce and lemon juice. Drizzle the sauce over the tuna and citrus. Sprinkle the tuna with chopped mint and diced jalapenos.

What I've learned this week
We made powerpoint presentations to our classmates and teacher about the different types of tourism, and they were so pretty. I presented cultural tourism which is pretty interesting because is the #1 reason why people travel all around the world. Cultural tourism is amazing because you can get to explore new cultures of the world, and monuments. We also learned the hospitality outlets like freestanding businesses which is pretty cool. We worked in our pronouciation because I get confused sometimes. Also we learned how to use the words correctly in context like the transitive and intransitive verbs.

ANIMALS AND ENVIRONMENT
The animals were here before us, (in earth) we are taking over their home which is earth, because we are destroying it, we see it everyday, the buses that release smoke and sometimes is black smoke the worst of it! It affects the mother earth and also it affects our health, why do you think cancer is taking over everyone? Also, the factories they realease smoke all day everyday all over the world. Then we have the trash, sometimes we throw our trash to the floor and that is wrong. Sometimes big companies throw their trash to the ocean or the sea, that is so wrong, it kills and affects the animals in the sea, sometimes the animals die and that is so sad and unfair. Animals don't have a voice. The abuse of animals is so unfair and not human, I've seen videos of sea world, they abuse violently of the whales, also in the circus they abuse of elephants and tigers and all the animals they have there. The animal testing is also a reality in many products we use, a little animal suffered from that (mostly bunnies) they have them locked in at laboratories and they never get to see the sun, it's so unfair and sad why would we do that to little animals? I have products that say ''Not tested on animals''. THAT'S AMAZING! I'm so happy a little animal didn't suffered from that. Why can't all the companies be like that? You don't have to abuse or kill an innocent animal. Then you have the hunt. Stupid people hunt animals for fun just to eat them and other stuff. That's so unnecesary. Also the fur in the clothes. Why kill an animal so you can wear it? It's not cool and it's murder. There's alot of violent acts from us the humans toward our animals on earth, i wish I could just stop it and everyone understands that if we continue doing this the animals will extinct. This situation is really sad and I wanted to write about it because it is one of the things that bothers me the most about our earth: the abuse of animals :(

What I learned this week
This week I learned different types of diagrams of tables in which you can take notes and be easier to catch the words of a topic. It was super intersting because I learned that you can create different diagrams to help my studying and all that learning stuff. Also we learned how to identify them, it was pretty fun! We also learned vocabulary words, the one I didn't knew was ¨budget¨ now I know what it is!

What I learned this week at English class
HI
What I learned this week is first of all: we finally get to learn what tourism means in English terms, because we opened the book (well Ms. Julia did because not everyone in the class has a book). Ms. Julia presented us in the TV some terms that we need to learn, like more English vocabulary so that we don¨t run out of words at the time we are writing essays or something, also to expand our vocabulary and make it more professional. We also learned what are we gonna get if we study turism, like traveling alot and meeting new people. We are also preparing for the TOEFL so that we can do great in the exam.
So in a small rewiew we learned what tourism is and the benefits about studying it, also we learned the definition of hospitality.

I would love to visit Machu Picchu. It is actually in my bucklet list or my before I die list! I think it would be an amazing experience to go there and watch the mother nature beauty. I would be amazed, also I would like to parachuting there, i mean, i don't think they allow me to ha, but that would be something else!
I mean, look at this, now imagine it looking at it with your own eyes and being there with the nice weather and with the people you love, that would be an actual dream.
Macchu Picchu is located in Peru, and the mountain has museums and tours. So I guess that would be really expensive so I need to save and study so I can work really hard in the future to have the money and go to MACCHU PICCHU! I guess that's my inspiration. Wouldn't you like to visit this amazing wonder of the world?

The reason I'm here..
One of the questions (at the moment) I get asked about the most, but that question makes me really think why. I guess it's because GLION is different than the other careers in Mexico, plus it is a very cool thing that it has some kind of Switzerland program, that's pretty fancy, isn't it?
SO, the reason I'm actually here is because I want to learn everything about gastronomy + tourism. WHY? Because I love to travel and discover new places, explore and at the same time discover the beautiful art of gastronomy, so I can open my own bussiness, like restaurants and stuff like that.
It's also amazing that I get to go out of this small town 2 times in the semester! So far I like it and I love it. I really hope I get to learn all about gastronomy and tourism.
